Yappy Easter Hops
An “egg”stra special way to put some “I Love You” in your pup’s Easter Basset. Tasty enough to almost allow your dogs to forgive you for the photo session you made them sit through with the Easter bunny.
- 3 Cups all-purpose flours
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ Cup plain nonfat yogurt
- ½ Cup molasses
- 2 large egg whites
- 1 ½ teaspoons pure vanilla extract
Stir together the flour, baking powder, and cinnamon in a bowl and set aside. Whisk together the yogurt, molasses, egg whites, and vanilla in large bowl. Add the dry ingredients to the wet ingredients and mix until smooth.
Drop the batter by the rounded teaspoon, 1½ inches apart, on the baking sheets. Bake for 12 to 14 minutes, or until light golden.
Cool to room temperature before serving.
Store in an airtight container for up to 1 week, or wrap well and freeze for up to 2 months. (Thaw before serving).
Yield: Makes 3 to 4 dozen eggscellent cookies.
