We haven’t found a Labrador – or any dog, for that matter – who wouldn’t trade the neighbor’s cat to chomp on this tasty treat. With velvety smooth honey and all-natural carob, this is a naturally sweet treat for your little honey.
- 2½ cups all-purpose flour
- ¾ teaspoon baking powder
- ½ teaspoon ground cinnamon
- 2 Tablespoons carob powder (available at most health food stores)
- ½ cup honey
- ½ cup canola oil
- 2 large eggs
- ¾ cup unsweetened applesauce
- ½ cup carob chips (available at most health food stores)
Preheat oven to 325°F. Grease three 12-cup mini-muffin pans with nonstick vegetable spray. Stir together the flour, baking powder, cinnamon, and carob powder in a large bowl and set aside. In a separate bowl, whisk together the honey and oil. Add the eggs, one at a time, then the applesauce, whisking thoroughly after each addition. Add the wet ingredients to the dry ingredients and stir just until moistened.
Fill the mini-muffin cups ⅔ full. Sprinkle with carob chips and bake for 20 to 25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Cool too room temperature before serving. Store in an airtight container for up to 4 days or wrap well and freeze for up to 2 months (thaw before serving)
