If Olive Oyl had made these, things might have worked out differently with Popeye.

Remember, dogs – even Popeye’s dog Jeep – don’t know that spinach is a vegetable and they’re supposed to hate it. Dogs actually like spinach , and it’s full of nutrients and iron, including St. Bernard-size helpings of healthy vitamins!Pupeye

  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 2 large eggs, beaten
  • ¼ cup olive oil
  • 1 cup skim milk
  • 1 cup grated low-fat cheddar cheese
  • 1-10 oz. package frozen chopped spinach, thawed & drained

Preheat the oven to 350° F. Grease an 8×8-inch square pan with nonstick vegetable spray.

Stir together the flour and baking powder in a large bowl and set aside. In a separate bowl, whisk together the eggs, olive oil, and milk. Add the wet ingredients to the dry ingredients and stir until smooth. Stir in the cheese and spinach.

Spread the batter evenly in the pan. Bake for 35 minutes, or until light golden.

Cut into squares. Cool completely before serving. Store in the refrigerator in an airtight container for up to 3 days, or wrap tightly and freeze for up to 2 months. (Thaw before serving)
